Green Coconut Stew with Moringa | Vegan Comfort Food Recipe

Inspired by African and Asian coconut broths, this stew is creamy, mineral-rich, and deeply groundingย  perfect for slow evenings.

Ingredients

  • 1 Tbsp coconut oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 small tomato, diced

  • 1 can (13.5 oz) coconut milk

  • 1 cup chickpeas or lentils, cooked

  • 1 tsp moringa powder or ยฝ cup fresh leaves

  • 1 cup spinach or amaranth leaves

  • Juice ยฝ lime

  • Sea salt, pepper

Directions

  1. Sautรฉ onion, garlic, and ginger in coconut oil.

  2. Add tomato; simmer until soft.

  3. Pour in coconut milk + chickpeas; cook 10 min.

  4. Stir in moringa + spinach; simmer briefly.

  5. Finish with lime juice + a deep breath.

Serving Idea: Serve over brown rice or millet.
