Inspired by African and Asian coconut broths, this stew is creamy, mineral-rich, and deeply groundingย perfect for slow evenings.
Ingredients

1 Tbsp coconut oil

1 small onion, chopped

2 cloves garlic, minced

1 tsp grated ginger

1 small tomato, diced

1 can (13.5 oz) coconut milk

1 cup chickpeas or lentils, cooked

1 tsp moringa powder or ยฝ cup fresh leaves

1 cup spinach or amaranth leaves

Juice ยฝ lime

Sea salt, pepper
Directions

Sautรฉ onion, garlic, and ginger in coconut oil.

Add tomato; simmer until soft.

Pour in coconut milk + chickpeas; cook 10 min.

Stir in moringa + spinach; simmer briefly.

Finish with lime juice + a deep breath.
